The cake disappeared that quick! </p> <p>Super easy to make and with ingredients you probably have on hand. I got this recipe from Recipezaar(you're shocked, I know, anyone want to buy me a membership to that site? No? Ok then, maybe I'll ask hubby for it for my birthday :), back to the recipe at <strike>hand</strike> mouth). I literally put an entire layer of cinnamon on top, and even with that hubby and I both agreed that it could use some cinnamon actually mixed into the cake batter as well. The cake was ever so slightly on the dry side(and I did add the egg, it would be even more dry if you omitted the egg), so I think next time I might add some applesauce or something to help make it a little moister. Mix together the first 7 ingredients.</p> <p>2. Pour into either an 9"x13" pan or 2 8" or 9" round pans.(if you're using a 9"x13" why not save yourself a dirty bowl and mix it right in there, suppose you could do the same with the round pans then just pour half in the other as well).</p> <p>3. Sprinkle your brown sugar and cinnamon toppings on top and pour on your melted butter.</p> <p>4. Quick and easy to make, I usually serve them on some of my homemade buns, but if I don't feel like baking buns I just buy some whole wheat hamburger buns to use. Brown ground beef and onion in a largish pot, drain/rinse or whatever it is you like to do to get all the fatty stuff off.</p> <p>2. Dump beef/onion back into pot and add in remaining ingredients, mix well. Cover and simmer for about 30 minutes.</p> <p>3. Scoop out onto toasted buns or bread. If you prefer you can serve it on pasta or rice or whatever. I like it on buns though, yum yummy!</p> <p>I think I mentioned this before, but I'll say it again anyway ;). I can't believe it's been more than 4 months since I posted on here...oops! LOL. So I'm going to try to get at least a few recipes posted this weekend.</p> <p>This is one of my favourite cookie recipes. Not only is it so chocolaty and full of yumminess, but it's super easy to make and you don't even have to turn on the oven to do make them, just need the stove. I will most likely be making these again within the next few days. Drop spoonfuls onto wax paper and let cool. </p> <p>I will often put a sheet of wax paper on one of my baking sheets and put some of the cookies on there so I can set it in the fridge or freezer so some of them set quicker so we can enjoy them sooner.....I mean who wants to look at them and have to wait for them? When I make it again I will update with a pic.</p> <p>1 Medium Eggplant</p> <p>3 tbsp Butter</p> <p>3 tbsp Flour</p> <p>1 Onion, chopped</p> <p>19oz Can Tomatoes, chopped</p> <p>1 tsp Salt</p> <p>1 tbsp Brown Sugar</p> <p>1 cup Grated Cheddar Cheese</p> <p>1 cup Dry Bread Crumbs</p> <p>Peel and dice eggplant. Cook in salted boiling water for 10 minutes. Drain. Put in a buttered casserole. Melt butter in a saucepan, stir in flour. Add onions, tomatoes, brown sugar and salt. Cook over low heat, stirring constantly until thick. Pour over eggplant and mix to combine all together. I just found this recipe last week and have made it twice already because they are just sooooo good! </p> <p>They are different then any other Skins I have had before, because you actually season the skins before baking them and wow does it ever taste fantastic!! Bake Potatoes(my way: stab with fork a few times,coat with olive oil and bake directly on rack at 425F for 50 to 60 minutes depending on size). Then cut in half lengthwise and scoop potato out, leave a little bit to support the skin.</p> <p>2. Combine oil, parmesan, salt, garlic powder, paprika and pepper. Brush all over both sides of the skins and place them on a baking sheet. </p> <p>3. Bake at 475F for 8 to 10 minutes, turn over then bake on other side for another 8 to 10 minutes.</p> <p>4. LOL</p> <p>Of course most recipes using apples call for a specific kind, I know some kinds are supposed to be better then others for baking, but who am I to actually listen to stuff like that!? I actually made this recipe because I found some apples in the bottom of my crisper drawer, I have no idea how long they were there for, probably about a month, definitely not nice and crispy to eat alone, but still great to peel them and bake with them!(food costs too much these days to just throw away when not necessary!) . The apples I had were Red Delicious.</p> <p>This was so easy and absolutely delish! I topped it with some Whipped topping to serve but I'm sure would have been great with Vanilla Ice Cream if we had any.</p> <p>And it just dawned on me now that if you are in Canada, contact your local Epicure consultant and get some VE Apple Pie Spice, I bet that would be fantastic for this instead of just the cinnamon, I have some but didn't even think of it when I made this! Another one I found on <a href="http://www.recipezaar.com">www.recipezaar.com</a> then made my own changes to, although I don't think I changed much on this one from the original posted one as it was excellent to begin with.</p> <p>This is probably my husbands favourite meal that I make.</p> <p><a href="http://lh6.ggpht.com/junodesigns/SGVZg4ct-VI/AAAAAAAAAhg/l_bEiDCM_1k/s1600-h/100_0770%5B6%5D.jpg"><img style="border-top-width: 0px; border-left-width: 0px; border-bottom-width: 0px; border-right-width: 0px" height="326" alt="100_0770" src="http://lh5.ggpht.com/junodesigns/SGVZ5AkLumI/AAAAAAAAAhk/6MIYu1EaoeE/100_0770_thumb%5B4%5D.jpg?imgmax=800" width="422" border="0" /></a> </p> <p>4 Boneless Skinless Chicken Breasts</p> <p>2 Clove Garlic</p> <p>1/2 tsp Ginger</p> <p>1 1/4 tsp Crushed Red Pepper Flakes</p> <p>1/2 cup Juice(I have tried this with Apple Juice, Orange Juice, Lemonade and even Apple Sauce...so use what you have, all tasted great, I think the Lemonade tasted best but there was a very subtle difference between all of them)</p> <p>2/3 cup Brown Sugar</p> <p>4 tbsp Ketchup</p> <p>1 tbsp Cider Vinegar(the recipe called for Cider Vinegar which I used to use, but when I ran out I couldn't find it anywhere so have been using Apple Cider Vinegar since and it works fine, I'll be honest I don't know the difference between these vinegars LOL)</p> <p>1 cup Water</p> <p>2/3 cup Soy Sauce(I've made it both with regular Soy Sauce and with Low Sodium Soy Sauce, it actually tastes different both ways, better with Low Sodium)</p> <p>corn starch</p> <p>1. Heat about 2 tbsp of Olive Oil in a large pot. Cut chicken breast into bite sized pieces and cook in pot until nicely browned and cooked through. Remove chicken from the pot and set aside.</p> <p>2. Mix all remaining ingredients together and heat over medium heat until well mixed, add about a tbsp of cornstarch to help the sauce to start thickening a bit..</p> <p>3. Preheat oven to 350F.</p> <p>2. In a large bowl, mix together flour, baking soda, salt and cinnamon. </p> <p>3. In a separate bowl cream butter and sugar together. Stir in eggs, Vanilla and mashed bananas. </p> <p>4. Add liquid mixture to dry and stir just until mixed.</p> <p>5. Pour batter into greased loaf pan, bake at 350F for 60 minutes. </p> <p>I have also made this recipe in an 8x8 glass dish when I didn't have any loaf pans. They were so good we didn't even make it to the table to eat them, they disappeared off the plate as I put them on it. Put about a teaspoon to a teaspoon and a half of mixture in the middle of wonton wrapper. Fold wrapper together into a triangle, using your finger wet around the edges to make them stick together.                                                                    4. Put them on a baking sheet either lined with a silicone baking sheet or sprayed with cooking spray. Spray Wontons with canola oil if you have an oil spray bottle, if not then just brush them lightly with oil.                                                                      5. Bake in oven at 425 for 10 to 15 minutes, about halfway flip them and spray the other side.</p> <p>We didn't  dip them in anything, they were really good as they were, but I did pick up some sauce this weekend to try dipping them when I make them again. Preheat oven to 425 degrees F . </p> <p>2. Brown pork in a saucepan. Remove from heat and drain. </p> <p>3. In a medium bowl, mix pork, cabbage, carrot, green onions, cilantro, sesame oil, oyster sauce, garlic and chile sauce. </p> <p>4. Mix cornstarch and water in a small bowl. </p> <p>5. Put about 1 tablespoon of pork mixture in centre of spring roll wrappers. Roll wrappers around the mixture, folding edges inward to close. Moisten fingers in the cornstarch and water mixture, and brush wrapper seams to seal. </p> <p>6. Put spring rolls in a single layer on a baking sheet. Brush with canola oil. Bake for 20 minutes, turning after 10 minutes, or until hot and lightly browned.</p> <p>7. Serve on vermicelli salad bowl or eat on their own. Try dipping them in some Nuoc Cham(recipe at the end of this post) and with a little bit of chile sauce on it. </p> <p> </p> <p> </p> <p><strong><u>Rice Vermicelli Salad Bowl</u></strong></p> <p>1 pkg rice vermicelli</p> <p>1 cup green onion, sliced thinly</p> <p>2 cups lettuce, shredded thinly</p> <p>1/2 cup shredded carrot</p> <p>1 long english cucumber, sliced then cut in half</p> <p>fresh or freeze dried cilantro</p> <p>Nuoc Cham(recipe to follow)</p> <p>1. Cook rice vermicelli according to package directions, leave to cool in strainer/colander. </p> <p>2. Put a couple handfuls of rice vermicelli in each bowl for how many you are serving. Divide green onion, lettuce, carrots and cucumber evenly among bowls.</p> <p>3. Top with about a tablespoon of cilantro and as much Nuoc Cham as desired(usually about 1/4 to 1/2 cup). As usual I didn't follow it exactly, but used it as a good inspiring recipe to make my own. When they are almost done add garlic to soften just a bit, turn off heat.</p> <p>In a bowl beat eggs with a splash of milk or cream. Add meat/pepper/onion mixture, about 1/2 of the grated cheese, salt and pepper to taste. Whisk it all together, pour into a baking dish sprayed with cooking spray(I use an 8x8 glass dish, I have also used my large cast iron pan), and top with remaining cheese. I thought since I've started a food blog I should really post it on here. We do order in pizza occasionally just because it's easy, but more often I make my own. You can make it in less time then making the call and waiting for the delivery, and when you make it yourself you know what you're putting in it and can make it so much healthier. I started making this pizza last fall and it has become our favourite!</p> <p>For the pizza crust I will usually use a whole wheat or multigrain storebought one, but sometimes I will make my own crust. Bring to a boil, reduce heat and cover, poach chicken for approx 10 minutes until cooked through.</p> <p>2.  When chicken is cooked shred it using 2 forks. Mix with some bbq sauce.</p> <p>3.  Slice onion and cook until caramelized.</p> <p>4.  Put a layer of bbq sauce on your pizza crust, top with sliced tomatoes, follow with a layer of caramelized onions, then your shredded chicken. Top it all with shredded cheese(2 cups is just an estimate, use however much cheese you like on your pizza). </p> <p>5. I only made a couple small changes from what he did, but next time I want to make it with some Italian Sausage in it, I didn't have any this time to try it. He made it with fennel which I'm really not a fan of the taste of fennel, so I used oregano instead which we love.  The hubby said he preferred it to regular spaghetti sauce, I don't think I really preferred it, but it was definitely a nice change. </p> <p> </p> <p>4 Red Peppers</p> <p>1 Large Onion</p> <p>3 Cloves of Garlic(or to taste)</p> <p>3 tbsp Oregano</p> <p>milk</p> <p>olive oil</p> <p>salt and pepper</p> <p>1. Preheat oven to 350.</p> <p>2. Cut peppers and onions into large chunks. Put them on a baking sheet or pan with garlic cloves, sprinkle with oregano and drizzle with olive oil. Roast in oven for 45 minutes to one hour, until nice and soft.</p> <p>3. Puree roasted veggies using either blender or immersion blender. Add milk(or cream if you have it) as needed to make it nice and smooth and creamy. </p> <p>4. Warm on stove while you cook your pasta, adding salt, pepper and more oregano if you wish. There is just something so satisfying about all the flavor in a good guacamole. </p> <p>I have tried many different recipes for guacamole as well as storebought, but this recipe is probably my favorite. You can adjust for your taste of spiciness, but even my mom who hates things too hot loves this, so while it does have a kick, it's nowhere near extreme. If you like it extreme though just increase the chili powder and/or hot sauce.</p> <p>Guacamole With a Kick</p> <p>3 small or 2 medium avocados, mashed <br />1 tbsp lemon juice(lime juice should be fine if it's all you have) <br />1 medium onion, diced fine <br />1 large tomato, diced fine <br />1/2 tsp salt <br />1/2 tsp pepper <br />1/2 tsp chili powder <br />1 dash hot sauce</p> <p>1. Mix all ingredients together in a bowl, adjust chili powder and hot sauce according to person taste and tolerance for 'heat'. <br />2. Usually it's my tiny ugly kitchen that's a turnoff and makes me not want to sometimes. </p> <p>I must have got it from my mom who has so many cookbooks I wouldn't even want to guess how many, but I love to try new recipes. I plan on using this blog to share recipes I have tried and love, but also to save and store recipes I come across that I would like to try. </p> <p>My hubby and I are hoping to lose some weight this year, so I would like to keep my recipes on here relatively healthy and lower fat, but I know there will be some recipes that will sway from that just because they're so darn good LOL. </p> <p>I will try my best to post as many pics of the things I make as I can, and I will add any changes or opinins I have regarding the recipe. </p> <p>I rarely follow a recipe exactly as it is, I tend to just use recipes as a guideline and make it my own.
