Sweet Potato Fries

Everyone loves french fries, but of course they're not exactly the best option for your health. Sweet Potato fries are great replacement, Sweet Potatoes are so good for you.

Now when I make these I cheat, I buy a big bag of pre-cut sweet potatoes from Costco, if your Costco has them pick up a bag and save yourself some cutting time.

1lb Sweet Potatoes

1 tbsp Olive Oil

2 tsp Chili Powder

2 tsp Garlic Powder

2 tsp Onion Powder

salt, to taste

Preheat oven to 450 F.

Peel and cut the sweet potatoes into strips. Put them into a large zippered plastic bag along with oil and all spices. Close the bag and give it all a really good shake until all the potatoes are nicely coated.

Dump them onto a baking sheet and spread them out evenly. Bake for about 30 minutes.

They will look blackened, but they are not burnt(well, unless you really overdid them lol).

 

Chili

mmmm yumm! Chili, my family LOVES Chili. I don't know how anyone can eat the canned stuff, ok yes I've had it before and on a hot dog it's not too bad, but I could never sit and eat a bowl of it.

I came across a recipe for Chili about 2 years ago on my favourite recipe site, Recipezaar. As usual I didn't follow it exactly, but used it as a good inspiring recipe to make my own. And it is soooooo good!

I make it in my slow cooker, but do it on the stove if you don't have one or if you prefer. Oh, and btw, this makes one big slow cooker full, it fills my 8 quart slow cooker and feeds my family of 4 for 2 meals sometimes with leftovers even after that.

1 giant bulk pack lean ground beef

2 large onions

4 cloves garlic

2x 398ml cans of tomato sauce

2x 156ml cans of tomato paste

796ml can of whole tomatoes

398ml can of diced tomatoes

2 1/2 tsp cumin

2 1/2 tsp paprika

1 1/2 to 2 tbsp Chili Powder

2 1/2 tsp Oregano

1 1/2 tsp salt

1 1/2 tsp pepper

3 tsp Worcestershire sauce

Saute meat, onions and garlic. Add to slow cooker when done.

Add all remaining ingredients, give it a good stir, cook on low for 8 hours.

You can add a can or two of chili beans if you wish, my family does not really care for beans so I leave them out.

Egg Frittata

This is yummy, super easy, and you can put whatever you want in it.  I usually make double the meat and veggies one time, then freeze half so the next time it's even quicker and easier. This recipe and some whole wheat toast is enough to feed my family of 4. We eat this almost as often for dinner as we do for breakfast.

This is not the way I make it every time, what I put in it depends on what I have in the fridge at that time, I'll make the recipe follow how I usually do it(the one in the pic has yellow and red peppers, and ground chicken).

1 green pepper

1 red/yellow or orange pepper

1 large onion

1 clove garlic

6 links breakfast sausage

8 to 10 large eggs

1 cup grated cheese

salt

pepper

Preheat oven to 400 F.

Dice peppers and onions, cook until soft. When they are almost done add garlic to soften just a bit, turn off heat.

In a bowl beat eggs with a splash of milk or cream. Add meat/pepper/onion mixture, about 1/2 of the grated cheese, salt and pepper to taste. Whisk it all together, pour into a baking dish sprayed with cooking spray(I use an 8x8 glass dish, I have also used my large cast iron pan), and top with remaining cheese. Put in oven for approximately 25 to 30 minutes.

I find sometimes it doesn't seem to cook fully in the center, so I just pop it under the broiler for a few minutes and it seems to finish it off and browns the cheese nicely too.
