Diet Coke Sloppy Jo's

We call these "Sloppy Mommy's" in our house, why? Because I'm Jo of course! LOL

This is a tasty lower fat/calorie Sloppy Joe that I found on Recipezaar(Diet Coke Sloppy Joes). Quick and easy to make, I usually serve them on some of my homemade buns, but if I don't feel like baking buns I just buy some whole wheat hamburger buns to use. If you are a bean person I think a can of kidney beans would go good in them, my family does not like beans though and I'm not much of a fan either so I don't use them.

1 lb Lean Ground Beef

1 medium Onion, chopped

1 1/2 tbsp Corn Starch (original recipe calls for arrowroot which I have never had in my pantry so I use corn starch instead)

1 cup Diet Cola(I generally use Coke Zero because that's what I drink and have in the house)

2/3 cup Ketchup

2 tbsp Vinegar

1 tbsp Worcestershire Sauce

2 tsp Mustard

1. Brown ground beef and onion in a largish pot, drain/rinse or whatever it is you like to do to get all the fatty stuff off.

2. Dump beef/onion back into pot and add in remaining ingredients, mix well. Cover and simmer for about 30 minutes.

3. Scoop out onto toasted buns or bread. If you prefer you can serve it on pasta or rice or whatever. I like it on buns though, yum yummy!

I think I mentioned this before, but I'll say it again anyway ;). I find draining the fat off of ground beef and pork to be nothing but a pain in the rear and it still leaves the meat very greasy, so anytime I brown ground meat for a recipe I dump the meat into my colander after it's done and rinse it under warm water to wash away all the greasy yucky stuff.

No Bake Chocolate Cookies

Wow, how neglected my poor food blog is. I can't believe it's been more than 4 months since I posted on here...oops! LOL. So I'm going to try to get at least a few recipes posted this weekend.

This is one of my favourite cookie recipes. Not only is it so chocolaty and full of yumminess, but it's super easy to make and you don't even have to turn on the oven to do make them, just need the stove. I will most likely be making these again within the next few days. They are definitely bad for my ever widening body, but they are definitely the perfect comfort thing right now with what's going on with us right now(if you don't read my main blog, My Absent Mind, my hubby got laid off a couple weeks ago).

So enjoy this great addition to any holiday cookie tray, but great all year long! Can you believe I took this pic last Christmas and never got around to posting this recipe! Not that it's a hard recipe to find mind you lol, I think this is a pretty popular cookie!

1/4 cup cocoa

2 cups Sugar

1/2 cup Milk

1/2 cup Margarine

1/2 cup Peanut Butter

3 cups Quick-Cooking Oatmeal(I've used regular Oatmeal before by accident and they came out just as good)

1 teaspoon Vanilla(am I the only one who thinks there's never enough vanilla and adds a few good chugs of this stuff?)

1 good pinch of Salt

1. Mix cocoa, sugar, milk and margarine in a saucepan and bring to a boil, cook for about a minute.

2.Remove saucepan from heat and add all the remaining ingredients, mix well.

3. Drop spoonfuls onto wax paper and let cool.

I will often put a sheet of wax paper on one of my baking sheets and put some of the cookies on there so I can set it in the fridge or freezer so some of them set quicker so we can enjoy them sooner.....I mean who wants to look at them and have to wait for them? We want them now don't we?

Eggplant Casserole

This is my mom's recipe! I am not a big fan of eggplant, but I LOVE this casserole! You can't even tell it's eggplant in it!

I don't have a pic because I haven't made this in years, though I really need to one of these days because I have been craving it! But my friend Rene asked me for it, that is why I'm posting it! When I make it again I will update with a pic.

1 Medium Eggplant

3 tbsp Butter

3 tbsp Flour

1 Onion, chopped

19oz Can Tomatoes, chopped

1 tsp Salt

1 tbsp Brown Sugar

1 cup Grated Cheddar Cheese

1 cup Dry Bread Crumbs

Peel and dice eggplant. Cook in salted boiling water for 10 minutes. Drain. Put in a buttered casserole. Melt butter in a saucepan, stir in flour. Add onions, tomatoes, brown sugar and salt. Cook over low heat, stirring constantly until thick. Pour over eggplant and mix to combine all together. Combine cheese and bread crumbs and sprinkle on top.

Bake at 350F for about 30 minutes.

Potato Skins

These are the BEST Potato Skins!! I got this recipe as well from www.recipezaar.com, it is recipe #439008 posted by CrAzYcOoKeR222 and I thank them immensely for posting it!! I just found this recipe last week and have made it twice already because they are just sooooo good!

They are different then any other Skins I have had before, because you actually season the skins before baking them and wow does it ever taste fantastic!! Once again, very little change made to this recipe for me because it was so darn good to begin with!

4 large Baking Potatoes(ok, use whatever you have, I usually buy big bags of Russets and just pick the nicest ones out of the bag for baking, I actually find the medium sized potatoes make a nicer size Skin)

4 tbsp Olive Oil

1 1/2 tbsp Grated Parmesan Cheese

1/2 tsp Salt

1/2 tsp Garlic Powder(ok, I put in closer to a full tsp because I love garlic powder)

1/2 tsp Paprika

Pepper, to taste

Bacon, as much as you desire :), cooked and crumbled (I always use Turkey bacon, my family likes it better, lower fat and to us has way more flavour)

3 cups Shredded Marble Cheese

Sour Cream

Green Onion, chopped(I find cutting green onion with scissors to be much quicker and easier then chopping with a knife)

1. Bake Potatoes(my way: stab with fork a few times,coat with olive oil and bake directly on rack at 425F for 50 to 60 minutes depending on size). Then cut in half lengthwise and scoop potato out, leave a little bit to support the skin.

2. Combine oil, parmesan, salt, garlic powder, paprika and pepper. Brush all over both sides of the skins and place them on a baking sheet.

3. Bake at 475F for 8 to 10 minutes, turn over then bake on other side for another 8 to 10 minutes.

4. Turn skins right side up, fill with cheese and cooked, crumbled bacon.  Bake for a few more minutes until cheese is melted.

Top with sour cream and onions and E-N-J-O-Y!!

Apple Crumble

hmm, guess where this recipe came from? Yeah, of course, www.recipezaar.com, can you tell I love that site?? LOL

Of course most recipes using apples call for a specific kind, I know some kinds are supposed to be better then others for baking, but who am I to actually listen to stuff like that!? I actually made this recipe because I found some apples in the bottom of my crisper drawer, I have no idea how long they were there for, probably about a month, definitely not nice and crispy to eat alone, but still great to peel them and bake with them!(food costs too much these days to just throw away when not necessary!) . The apples I had were Red Delicious.

This was so easy and absolutely delish! I topped it with some Whipped topping to serve but I'm sure would have been great with Vanilla Ice Cream if we had any.

And it just dawned on me now that if you are in Canada, contact your local Epicure consultant and get some VE Apple Pie Spice, I bet that would be fantastic for this instead of just the cinnamon, I have some but didn't even think of it when I made this! If you're in the US, sorry I'm pretty sure Epicure isn't down there, which is too bad because they have some AWESOME spices!

6 Apples, peeled and either sliced or cut into bite size pieces, whichever you prefer, I did the bite size.

1/3 cup Brown Sugar

1 tsp Cinnamon

TOPPING:
1 cup Whole Wheat Flour

1/2 cup Brown Sugar

1 tsp Baking Powder

1/2 tsp Salt

1 egg

1 tsp Cinnamon

1/3 cup Butter, melted

1. Mix apples, brown sugar and cinnamon and flatten out in bottom of a baking dish.

2. Mix all the topping ingredients (EXCEPT cinnamon and butter) with a fork. Sprinkle on top of apples.

3. Drizzle melted margarine on top, sprinkle with cinnamon. Bake at 375F for 40 minutes.

Bourbon Chicken

Ok, so this doesn't have any Bourbon in it, but it has sort of a Bourbon or Asian type chicken flavour. Another one I found on www.recipezaar.com then made my own changes to, although I don't think I changed much on this one from the original posted one as it was excellent to begin with.

This is probably my husbands favourite meal that I make.

4 Boneless Skinless Chicken Breasts

2 Clove Garlic

1/2 tsp Ginger

1 1/4 tsp Crushed Red Pepper Flakes

1/2 cup Juice(I have tried this with Apple Juice, Orange Juice, Lemonade and even Apple Sauce...so use what you have, all tasted great, I think the Lemonade tasted best but there was a very subtle difference between all of them)

2/3 cup Brown Sugar

4 tbsp Ketchup

1 tbsp Cider Vinegar(the recipe called for Cider Vinegar which I used to use, but when I ran out I couldn't find it anywhere so have been using Apple Cider Vinegar since and it works fine, I'll be honest I don't know the difference between these vinegars LOL)

1 cup Water

2/3 cup Soy Sauce(I've made it both with regular Soy Sauce and with Low Sodium Soy Sauce, it actually tastes different both ways, better with Low Sodium)

corn starch

1. Heat about 2 tbsp of Olive Oil in a large pot. Cut chicken breast into bite sized pieces and cook in pot until nicely browned and cooked through. Remove chicken from the pot and set aside.

2. Mix all remaining ingredients together and heat over medium heat until well mixed, add about a tbsp of cornstarch to help the sauce to start thickening a bit..

3. Add chicken back in and bring to a boil, then reduce heat and simmer for about 20 minutes. Add more corn starch if needed for a nice sauce.

4. Serve over rice or pasta. I always serve it over Whole Wheat Linguine then top with Sesame Seeds and Green Onion if I have it.

Warm Spinach and Artichoke Dip

I order this stuff a LOT when we go to restaurants, love it! But of course restaurants tend to use the highest fat ingredients. It is really easy to make at home and easy to make a lot lower fat by using low fat ingredients.

When I make it I fill 2 oval dishes(as you see in the pic) that I picked up at the dollar store, but I place both dishes on a baking sheet to put in the oven.

1/2 cup Low Fat Sour Cream

1/2 cup Low Calorie Mayonnaise(I'm a Miracle Whip lover, so that's what I use)

1/2 cup Grated Parmesan Cheese(you can use fresh parmesan if you want, but I'm cheap so I just use it from my big container of Kraft grated parmesan)

1/2 cup Shredded Skim Milk Mozzarella

2 tsp Minced Garlic

1 pkg Frozen Spinach, thawed and drained(squeeze the water out)

1 can Artichoke Hearts, chopped(if you can fine the cans of prechopped hearts even better!, I seem to only be able to find these at the dollar store of all places, so stock up when they have them, only a dollar there, Safeway is about $3!)

Combine all ingredients in a bowl, pour into oven safe dishes and bake for about 20 minutes at 325F. Let it cool for a few minutes then dip away with crackers, tortilla chips or veggies.

Banana Bread

mmmm, yummy! I've been using this Banana Bread recipe for a couple of years now, my family loves it when I make this. It's a very moist and cake-like version of Banana Bread.

Feel free to add chocolate chips to it if you would like!

1 1/2 cups All Purpose Flour

1 1/2 cups Whole Wheat Flour

1 tsp Baking soda

1/4 tsp Salt

3/4 tsp Cinnamon(or however much you like, we love cinnamon so I tend to add a lot)

1/4 cup Butter

1/4 cup Applesauce

3/4 cup Brown Sugar

2 Eggs, beaten

1 tsp Vanilla Extract

2 1/3 cups Mashed Bananas(the riper the better, approx 5 bananas)

1. Preheat oven to 350F.

2. In a large bowl, mix together flour, baking soda, salt and cinnamon.

3. In a separate bowl cream butter and sugar together. Stir in eggs, Vanilla and mashed bananas.

4. Add liquid mixture to dry and stir just until mixed.

5. Pour batter into greased loaf pan, bake at 350F for 60 minutes.

I have also made this recipe in an 8x8 glass dish when I didn't have any loaf pans. It came out great, just double the recipe and bake for about 45 minutes.

Guacamole with a Kick

I can't believe I haven't posted this yet. I thought I had, but I guess I just took the picture to prepare to but didn't get any farther then that. A friend asked me today how to make Guacamole so now I guess is the time to post it!

And sorry I haven't posted any recipes in a while! Since moving my blogging groove has been gone, but I'm trying to get it back ;).

I LOOOOVE Guacamole and after trying many many different recipes and liking them all, once I tried this one it was an automatic favourite and the only one I have used since.

2 avocados, mashed

1 tbsp lemon juice

1 medium onion, diced fine

1 large tomato, diced fine

1/2 tsp salt

1/2 tsp pepper

1/2 tsp chili powder

1 dash hot sauce

1. Mix all ingredients together in a bowl, adjust chili powder and hot sauce according to personal taste and tolerance for 'heat'.
2. Cover and allow to chill for a bit, serve as desired.
**make sure avocados are nice and ripe or it will seriously affect how good your guacamole is.

Baked Wontons

I used Julie Van Rosendaal's Wonton recipe as an inspiration for these. They were so good we didn't even make it to the table to eat them, they disappeared off the plate as I put them on it. I barely was able to snap a picture before they were all gone.

1/2 lb. ground pork
1/4 cup green onions, finely chopped                                        1 tbsp. soy sauce
1 tsp. rice vinegar
1 tsp. sesame oil                                                                  1 pkg wonton wrappers(you won't use all of them)

1. Brown ground pork and drain off fat.                                     2. Mix pork with remaining ingredients.                                      3. Put about a teaspoon to a teaspoon and a half of mixture in the middle of wonton wrapper. Fold wrapper together into a triangle, using your finger wet around the edges to make them stick together.                                                                    4. Put them on a baking sheet either lined with a silicone baking sheet or sprayed with cooking spray. Spray Wontons with canola oil if you have an oil spray bottle, if not then just brush them lightly with oil.                                                                      5. Bake in oven at 425 for 10 to 15 minutes, about halfway flip them and spray the other side.

We didn't  dip them in anything, they were really good as they were, but I did pick up some sauce this weekend to try dipping them when I make them again. (which will be soon!)

Vietnamese Night!

Vietnamese is one of my favourite foods, this was my first attempt at making it myself and it won't be the last! It was sooooo good!

Spring Rolls

1/2 pound ground pork

1 cup finely shredded cabbage

1/2 cup finely shredded carrot

1/4 cup green onions, thinly sliced

2 tablespoons chopped fresh cilantro

1/2 teaspoon sesame oil

1/2 tablespoon oyster sauce

1 1/2 teaspoons minced garlic

1 teaspoon chile sauce

1 tablespoon cornstarch

1 tablespoon water

1 pkg spring roll wrappers

1. Preheat oven to 425 degrees F .

2. Brown pork in a saucepan. Remove from heat and drain.

3. In a medium bowl, mix pork, cabbage, carrot, green onions, cilantro, sesame oil, oyster sauce, garlic and chile sauce.

4. Mix cornstarch and water in a small bowl.

5. Put about 1 tablespoon of pork mixture in centre of spring roll wrappers. Roll wrappers around the mixture, folding edges inward to close. Moisten fingers in the cornstarch and water mixture, and brush wrapper seams to seal.

6. Put spring rolls in a single layer on a baking sheet. Brush with canola oil. Bake for 20 minutes, turning after 10 minutes, or until hot and lightly browned.

7. Serve on vermicelli salad bowl or eat on their own. Try dipping them in some Nuoc Cham(recipe at the end of this post) and with a little bit of chile sauce on it.

 

 

Rice Vermicelli Salad Bowl

1 pkg rice vermicelli

1 cup green onion, sliced thinly

2 cups lettuce, shredded thinly

1/2 cup shredded carrot

1 long english cucumber, sliced then cut in half

fresh or freeze dried cilantro

Nuoc Cham(recipe to follow)

1. Cook rice vermicelli according to package directions, leave to cool in strainer/colander.

2. Put a couple handfuls of rice vermicelli in each bowl for how many you are serving. Divide green onion, lettuce, carrots and cucumber evenly among bowls.

3. Top with about a tablespoon of cilantro and as much Nuoc Cham as desired(usually about 1/4 to 1/2 cup). Mix together, top with spring rolls and enjoy!

 

Nuoc Cham

1 cup water

4 tablespoons rice vinegar

4 tablespoons sugar

5 tablespoons fish sauce

1 tablespoon garlic, finely chopped

chilies(I just use dried)...as much as you like or don't like

1. Combine water, sugar and rice vinegar in small saucepan and bring to boil. Remove from heat and leave until cooled.

2. Add remaining ingredients and mix well.

Sweet Potato Fries

Everyone loves french fries, but of course they're not exactly the best option for your health. Sweet Potato fries are great replacement, Sweet Potatoes are so good for you.

Now when I make these I cheat, I buy a big bag of pre-cut sweet potatoes from Costco, if your Costco has them pick up a bag and save yourself some cutting time.

1lb Sweet Potatoes

1 tbsp Olive Oil

2 tsp Chili Powder

2 tsp Garlic Powder

2 tsp Onion Powder

salt, to taste

Preheat oven to 450 F.

Peel and cut the sweet potatoes into strips. Put them into a large zippered plastic bag along with oil and all spices. Close the bag and give it all a really good shake until all the potatoes are nicely coated.

Dump them onto a baking sheet and spread them out evenly. Bake for about 30 minutes.

They will look blackened, but they are not burnt(well, unless you really overdid them lol).

 

Chili

mmmm yumm! Chili, my family LOVES Chili. I don't know how anyone can eat the canned stuff, ok yes I've had it before and on a hot dog it's not too bad, but I could never sit and eat a bowl of it.

I came across a recipe for Chili about 2 years ago on my favourite recipe site, Recipezaar. As usual I didn't follow it exactly, but used it as a good inspiring recipe to make my own. And it is soooooo good!

I make it in my slow cooker, but do it on the stove if you don't have one or if you prefer. Oh, and btw, this makes one big slow cooker full, it fills my 8 quart slow cooker and feeds my family of 4 for 2 meals sometimes with leftovers even after that.

1 giant bulk pack lean ground beef

2 large onions

4 cloves garlic

2x 398ml cans of tomato sauce

2x 156ml cans of tomato paste

796ml can of whole tomatoes

398ml can of diced tomatoes

2 1/2 tsp cumin

2 1/2 tsp paprika

1 1/2 to 2 tbsp Chili Powder

2 1/2 tsp Oregano

1 1/2 tsp salt

1 1/2 tsp pepper

3 tsp Worcestershire sauce

Saute meat, onions and garlic. Add to slow cooker when done.

Add all remaining ingredients, give it a good stir, cook on low for 8 hours.

You can add a can or two of chili beans if you wish, my family does not really care for beans so I leave them out.

Egg Frittata

This is yummy, super easy, and you can put whatever you want in it.  I usually make double the meat and veggies one time, then freeze half so the next time it's even quicker and easier. This recipe and some whole wheat toast is enough to feed my family of 4. We eat this almost as often for dinner as we do for breakfast.

This is not the way I make it every time, what I put in it depends on what I have in the fridge at that time, I'll make the recipe follow how I usually do it(the one in the pic has yellow and red peppers, and ground chicken).

1 green pepper

1 red/yellow or orange pepper

1 large onion

1 clove garlic

6 links breakfast sausage

8 to 10 large eggs

1 cup grated cheese

salt

pepper

Preheat oven to 400 F.

Dice peppers and onions, cook until soft. When they are almost done add garlic to soften just a bit, turn off heat.

In a bowl beat eggs with a splash of milk or cream. Add meat/pepper/onion mixture, about 1/2 of the grated cheese, salt and pepper to taste. Whisk it all together, pour into a baking dish sprayed with cooking spray(I use an 8x8 glass dish, I have also used my large cast iron pan), and top with remaining cheese. Put in oven for approximately 25 to 30 minutes.

I find sometimes it doesn't seem to cook fully in the center, so I just pop it under the broiler for a few minutes and it seems to finish it off and browns the cheese nicely too.

BBQ Chicken Pizza

I've shared this on my regular blog, My Absent Mind, before. I thought since I've started a food blog I should really post it on here. We do order in pizza occasionally just because it's easy, but more often I make my own. You can make it in less time then making the call and waiting for the delivery, and when you make it yourself you know what you're putting in it and can make it so much healthier. I started making this pizza last fall and it has become our favourite!

For the pizza crust I will usually use a whole wheat or multigrain storebought one, but sometimes I will make my own crust. Whole wheat pita bread also makes fantastic pizza crusts!

1 pizza crust

bbq sauce

1 tomato(it does taste great without the tomato if you don't have one)

1 large onion

2 boneless skinless chicken breasts(you can use thighs if you wish)

water(or chicken broth)

1 tbsp oregano

2 cups shredded cheese of your choice(I use part-skim mozzarella)

1.  Put chicken in a pot and put enough water or chicken broth in to just cover, sprinkle in oregano. Bring to a boil, reduce heat and cover, poach chicken for approx 10 minutes until cooked through.

2.  When chicken is cooked shred it using 2 forks. Mix with some bbq sauce.

3.  Slice onion and cook until caramelized.

4.  Put a layer of bbq sauce on your pizza crust, top with sliced tomatoes, follow with a layer of caramelized onions, then your shredded chicken. Top it all with shredded cheese(2 cups is just an estimate, use however much cheese you like on your pizza).

5. Cook for about 10 to 15 minutes at 400*.

Roasted Red Pepper Sauce

I made this for dinner last night, it was inspired by an episode of Chef at Home. I only made a couple small changes from what he did, but next time I want to make it with some Italian Sausage in it, I didn't have any this time to try it. He made it with fennel which I'm really not a fan of the taste of fennel, so I used oregano instead which we love.  The hubby said he preferred it to regular spaghetti sauce, I don't think I really preferred it, but it was definitely a nice change.

 

4 Red Peppers

1 Large Onion

3 Cloves of Garlic(or to taste)

3 tbsp Oregano

milk

olive oil

salt and pepper

1. Preheat oven to 350.

2. Cut peppers and onions into large chunks. Put them on a baking sheet or pan with garlic cloves, sprinkle with oregano and drizzle with olive oil. Roast in oven for 45 minutes to one hour, until nice and soft.

3. Puree roasted veggies using either blender or immersion blender. Add milk(or cream if you have it) as needed to make it nice and smooth and creamy.

4. Warm on stove while you cook your pasta, adding salt, pepper and more oregano if you wish. Serve on your favorite pasta, I used whole wheat spaghetti as it was all I had in the house.

Guacamole With a Kick

Guacamole is one of my favorite things to eat! There is just something so satisfying about all the flavor in a good guacamole.

I have tried many different recipes for guacamole as well as storebought, but this recipe is probably my favorite. You can adjust for your taste of spiciness, but even my mom who hates things too hot loves this, so while it does have a kick, it's nowhere near extreme. If you like it extreme though just increase the chili powder and/or hot sauce.

Guacamole With a Kick

3 small or 2 medium avocados, mashed
1 tbsp lemon juice(lime juice should be fine if it's all you have)
1 medium onion, diced fine
1 large tomato, diced fine
1/2 tsp salt
1/2 tsp pepper
1/2 tsp chili powder
1 dash hot sauce

1. Mix all ingredients together in a bowl, adjust chili powder and hot sauce according to person taste and tolerance for 'heat'.

Jo's doing some cooking!

Well, *usually* I do like to do cooking and baking. Usually it's my tiny ugly kitchen that's a turnoff and makes me not want to sometimes.

I must have got it from my mom who has so many cookbooks I wouldn't even want to guess how many, but I love to try new recipes. I plan on using this blog to share recipes I have tried and love, but also to save and store recipes I come across that I would like to try.

My hubby and I are hoping to lose some weight this year, so I would like to keep my recipes on here relatively healthy and lower fat, but I know there will be some recipes that will sway from that just because they're so darn good LOL.

I will try my best to post as many pics of the things I make as I can, and I will add any changes or opinins I have regarding the recipe.

I rarely follow a recipe exactly as it is, I tend to just use recipes as a guideline and make it my own. My husband has been saying for a while that I should put together my own recipe book, so if I get far enough with this blog maybe it will lead me in that direction.
